It's Soup Weather - Winter Blast To Hit

Let it blow, let it blow, let it blow... Winter will officially be hitting Green Country (beloved nickname for eastern Oklahoma) on Wednesday with snow predicted in the 4-6 inch range that evening and more to come on Thursday.

It's time to dig out the snow shovels, limber up and get to work around here. What better way to warm up after all that shoveling, than to come in to a hot bowl of soup. Here is one my oldest son loves:

Easy Sausage/Potato Soup

Ingredients:
1 lb ground pork sausage (browned and drained)
16 oz. frozen hash brown potatoes
1 large onion, chopped
1 (14.5 oz) can chicken broth
2 cups water
1 (10.75 oz) can crean of celery soup (undiluted)
1 (10.75 oz) can cream of chicken soup (undiluted)
2 cups milk
shredded cheese for garnish

Directions:
Brown sausage in large Dutch oven over medium heat. Drain and return to pot. Add potatoes and next 3 ingredients; bring to boil. Cover, reduce heat and simmer 30 minutes. Stir in soups and milk; cook, stirring often until thoroughly heated. Garnish with shredded cheese if desired. Salt and pepper to individual taste.

Enjoy.
